Ingredients: 16 oz. chicken breasts (diced small); 1/2 onion (diced small); 3 cups broccoli (bite-sized); 3/4 cup rice (uncooked); 1 1/2 cup chicken broth or stock (low sodium); 1 cup condensed cream of chicken soup; 1/2 cup milk; 1/4 cup sour cream (or greek yogurt); 6 oz. mild cheddar (shredded); 2 tbsp butter; 1/2 tbsp. olive oil; 4 Ritz crackers (or any cracker you like); Seasonings (for chicken); 1 tsp Italian seasoning; 1 tsp dried thyme; 1/2 tsp garlic & onion powder; salt (to taste, you shouldn't need much); pepper (to taste)
