Ingredients: 1 slice of thick cut bacon (or 2 slices regular); 1 1/2 cup spinach (cooked with 1 garlic clove, and 1 tsp minced onions/shallots); 1/4 avocado (sliced thin); 2 eggs; .5 oz. cheddar; 1/4 red bell pepper (sliced); 1/2 tbsp sour cream (optional, for dipping); 1-2 tbsp salsa (optional, for dipping); 1 burrito wrap (use a low carb option if you need it)
