White Chicken Lasagna Soup

Name: White Chicken Lasagna Soup
Ingredients: 2 tbsp butter; 1/2 onion (yellow); 3 garlic cloves (minced); 12 oz rotisserie chicken (or 4 cups, pre-made, shredded); 5 cup chicken broth or stock (low sodium); 1/4 cup sun dried tomatoes (chopped); 8 oz pasta (I used trumpet noodles, but feel free to use a noodle of your choice!); 1 cup heavy whipping cream; 2 tbsp cornstarch; 1 cup spinach (chopped); 2 tsp italian seasoning; 1/8 tsp crushed red pepper (or more for additional spice!); 1/2 tsp salt (or to taste); 1/4 tsp black pepper (or to taste)
