Name: Grilled Shrimp Po Boy
Ingredients: 1 french bread roll (or hoagie roll); 6 large shrimp (peeled and deveined); 1/4 tsp cajun seasoning; 1/8 tsp garlic powder; 1/8 tsp paprika; 1/4 cup ice berg lettuce (sliced thin); 2-3 tomato slices (sliced thin, topped with flaky sea salt); 1/2 tbsp butter; 1/2 tbsp avocado oil; 1 cup mayo (I use full-fat but you can use light if you prefer); 2 tsp dijon mustard; 1/4 cup sweet relish; 1/2 small lemon (squeezed); 2 tsp capers (chopped, optional); 1 tbsp hot sauce; 1/2 tsp paprika; 1 tsp cajun seasoning; 1 tsp Worcestershire sauce; 2 garlic cloves (grated or minced fine); 1/2 green onion stalk (sliced thin); Salt to taste
