Name: Cheeseburger Soup
Ingredients: 1 lb ground beef (lean, option to use ground turkey); 1/2 onion (chopped small); 1 celery (chopped); 1 carrot (large, peeled and chopped); 1 tsp garlic cloves (minced); 1 tsp burger seasoning (optional, I used Weber brand); 1 tsp parsley (dried); 1 tsp salt; 1/2 tsp ground mustard; 1/4 tsp black pepper; 3 cups chicken broth or stock (low sodium, option to use beef broth); 1 lb potatoes (I used russet, diced); 1 cup cream (heavy or half/half); 3 tbsp corn starch; 1 cup mild cheddar cheese (shredded, plus more for garnish); chives (garnish)
