Name: Crab Cakes
Ingredients: 8 oz lump crab meat; 1 large egg; 2 tbsp of light mayonnaise; 2 tsp dijon mustard; 1 tsp worcestershire sauce; 1 tsp old bay seasoning; 1 tsp hot sauce; kosher salt (big pinch); 2 tbsp celery (diced fine, is optional, but adds a really nice texture); 2 tbsp. parsley (or dill); ¼ cup plain panko bread crumbs; 2-3 tbsp. canola oil or vegetable oil (for cooking); ⅛ cup olive oil; 1 lemon (squeezed); 1-2 tbsp honey (use more if you like a sweeter vinaigrette); kosher salt (pinch); pepper (small pinch); 3 cups spring mix; 1/2 cup cherry tomatoes
