Name: Blackened Salmon & Avocado Corn Salsa
Ingredients: 16 oz salmon (5ish oz. ea); 1 tbsp blackened seasoning (I used Kinder's Brand, see notes); oil (a drizzle); 1 avocado (diced); 15 oz. corn (1 can drained or fresh off the cob); 1 roma tomato (ripe, diced); 1/2 jalapeno pepper (seeded, diced); ½ red onion (medium, diced); ¼ cup cilantro (chopped); 1/2 lime (juice, fresh is best!); 1 tbsp green onion (finely chopped); ½ tsp garlic (minced); salt (big pinch)
