Ingredients: 1 to 2 cups vegetable oil (divided, only about 2 tbsp gets absorbed); 6 tortillas (burrito size); 1/2 onion (small, white, diced); 2 garlic cloves (minced); 1/2 tbsp chili powder; 1/2 tsp ground cumin; 1/4 tsp oregano; 1/2 tsp pepper; salt (a big pinch); 16 oz chicken breast (shredded, I used a rotisserie chicken to save time!); 4 oz green chilies (or 1 small can, diced); 1/2 cup monterey jack cheese (shredded); guacamole; pico de gallo (or salsa); cilantro
