Name: Coconut Chicken Tikka Masala
Ingredients: 5 garlic cloves (large); 2 small yellow onions (cut into fourths); 1 shallot (cut in half); 1 tbsp ginger (minced); 2 tbsp garam masala (you find this in the regular spice aisle); 1 tsp curry powder; 1 tsp ground turmeric; 1 tsp brown sugar; 1 tsp red pepper flakes (omit if you don't want a kick, or if you're making for children); 1 tsp salt; 1/2 lime (squeezed); 16 oz. chicken breasts (cubed, can also use chicken thighs); 1/3 cup greek yogurt (plain); 1/3 cup tomato paste (a little less than a full 6 oz. can); 3/4 cup unsweetened coconut milk (full-fat); 2 tbsp cilantro (chopped); 2.5 cups basmati rice (cooked with a few crushed garlic cloves and a pinch of salt)
