Name: Creamy Pesto Chicken and Roasted Tomatoes
Ingredients: 1 lb chicken breast (boneless, skinless, sliced in half); 1 tsp garlic powder; 1 tsp paprika; salt (to taste); pepper (to taste); 1/2 onion (yellow, chopped); 3 garlic cloves (minced); 1/2 cup basil pesto (I used the Mezzetta brand); 1/2 cup cream (heavy, half/half, or coconut); 2 tbsp olive oil; 10 oz grape tomatoes; salt (to taste); pepper (to taste); 1 cup vegetables (your choice, I used sautéed spinach. Zuchinni noodles would be great too.)
