Ingredients: 2 lb chicken thighs (boneless, skinless); 1.5 tsp chili powder; 1 tsp garlic powder; 1 tsp paprika (I used smoked, but plain works too!); 1 tsp cumin (ground); 1 tsp oregano; salt (big pinch); 2 tbsp oil; 14 oz fire roasted tomatoes (or 1 can, diced); 1/2 cup chicken broth or stock (low sodium); 1/2 onion (white, chopped); 4 garlic cloves (whole or minced); 2 tbsp tomato paste; 1 tbsp red wine vinegar; 2 tbsp lime juice (fresh); cilantro (to taste); 1 cup rice (cooked, 1/2 cup in ea.); 1 cup romaine (sliced thin); 1/4 avocado (cubed); 2/3 tbsp pico (option to use salsa); lime wedges (optional); 1 tbsp sour cream (optional); tortilla chips (optional)
