Ingredients: 16 oz chicken breast (boneless, skinless, option to use thighs); 1/2 yellow onion (medium, diced); 1 tsp cumin; 1 tsp chili powder; 1/2 tsp smoked paprika; 2 cup salsa verde (I used the La Costena brand); kosher salt (to taste); black pepper (to taste); 15 oz white beans (drained, rinsed); 1 cup mild cheddar cheese (shredded); 1 cup rice (cooked, 1/2 cup in ea.); 1 cup romaine (sliced thin); 1 green onion (sliced thin); 1/2 jalapeño (sliced thin); 1/2 avocado (sliced); cilantro (chopped, garnish); 2-3 tbsp salsa (optional); tortilla chips (optional)
