Ingredients: 16 oz. chicken thighs or legs (chicken breasts are great too ); 2 tbsp olive oil; 1 lemon (squeezed); ½ tbsp cumin; ½ tbsp garlic powder; ½ tbsp onion powder; 2 tsp oregano (dried); ¼ tsp cayenne; ¼ tsp red pepper flakes; Salt (big pinch); Pepper (big pinch); 1 cup uncooked basmati rice; 1 tsp cumin; 1 tsp cinnamon; 1 tsp turmeric; 1 tbsp butter; 3 garlic cloves (minced); ½ onion (diced small); 2 cups chicken broth or stock; 2 bay leaves; salt (big pinch); ½ cup plain greek yogurt; 1 baby cucumber (peeled and deseeded); 2 garlic cloves (minced); ½ lemon (squeezed); 2 tbsp dill; salt (big pinch); pepper (big pinch); 3 mini cucumber (sliced); 1/2 red onion (sliced thin)
