Ingredients: 1 large tortilla (burrito sized, you can use a carb consious brand if you need to cut back on carbs for any reason); 4 oz. lean ground beef (95% lean - or turkey/meatless crumbles); 1 corn tostada (just a little bigger than your palm ); 1 tbsp. taco seasoning (low sodium optional ); 1/2 cup butter lettuce (chopped, or any lettuce you have); 1/4 cup roma tomatoes; 1.5 tbsp. queso cheese (your choice); 2 tbsp mexican cheese (shredded)
