Lean Chicken Salad

Name: Lean Chicken Salad
Ingredients: 16 oz. chicken breasts; 4 cups chicken broth or stock (low sodium ); 1 lemon; thyme (optional); 1/4 onion (optional); 3 tbsp. celery (finely diced); 3 tbsp. pecans (or almonds, roughly chopped); 3/4 cup grapes (halved, you can use more or less); 1/4 green apple (finely diced, save the rest for a snack); 1 green onion (optional, adds freshness); 1 tsp. ranch seasoning; 3/4 cup mayo (light, how much you add will depend on the thickness, start with 1/2 cup); salt (to taste); pepper (to taste)
