Lemon and Garlic Herb Skewers with Caprese Pasta Salad

Name: Lemon Garlic & Herb Chicken Skewers with Caprese Pasta Salad
Ingredients: (3) 4 oz. chicken breasts; 2 tbsp Olive oil; ½ a lemon squeezed and then the zest; 1 garlic cloves (pressed + 2 crushed); Herbs (I used rosemary and thyme); salt and pepper; 1 cup Fusili Pasta (uncooked) (I used about 500g for the whole family with a little leftover); ¼ cup mozzarella ((pearls)); ½ - 1 cup cherry tomatoes; 8-9 leaves basil (chef tip, layer your basil leaves on top of one another, roll them, then cut so that you don't bruise your leaves); 1-2 tbsp. olive oil; 1-2 tbsp. lemon juice (other half lemon juiced); ½ tbsp red wine vinegar; 1 tsp. salt; pepper
