Ingredients: 1.5 lb flank steak (option to use sirloin or NY strip); 2 tbsp olive oil; 3 garlic cloves (minced); 2 tsp dried oregano; 1 tsp dried thyme; 1/2 tsp smoked paprika; salt (big pinch); cracked black pepper (big pinch); 2 tbsp lemon juice (fresh squeezed); 1/2 red onion (peeled and cut into 1 in. pieces); 10 oz cherry tomatoes; oil (a drizzle, just enough to lightly coat veggies); salt (a pinch); black pepper (big pinch); 1/2 cup plain greek yogurt; 1 baby cucumber (peeled and deseeded); 2 garlic cloves (minced); 1/2 lemon (squeezed); 2 tbsp dill; salt (big pinch); pepper (big pinch); 1-2 tbsp hummus; 1 cup romaine (sliced thin); 1/4 cup cucumber (sliced); 1 tbsp feta cheese (crumbled); 1/2 tbsp kalamata olives (pitted and sliced, optional)
