Ingredients: 1 lb chicken breast (boneless, skinless); 1 green bell pepper (thin sliced); 1 red bell pepper (thin sliced); 1/2 red onion (thin sliced); 1/2 cup mozzarella (shredded); 2 tbsp olive oil; 1 tsp italian seasoning; 1/2 tsp onion powder; 1/2 tsp garlic powder; salt (to taste); black pepper (to taste); parsley (fresh, garnish); 1 cup cooked jasmine rice (or another rice you prefer); 2 cups vegetables (your choice, I used the remaining peppers/onion and sautéed them)
