Name: Salmon Cobb Salad
Ingredients: 6 oz. salmon (or another protein (3 oz. in each serving)); eggs (1 ea. salad); 1 cup roma tomatoes; 1 Avocado (1/4 - 1/2 each salad); 6 cups romaine or spring mix lettuce; 2 tbsp. Croutons (I love garlic/herb flavored - optional); 2 tbsp. Monterey jack cheese (freshly shredded - optional); 4 strips bacon (chopped - optional (can use turkey bacon, or tempeh as well)); 1-2 tbsp. Low fat dressing of your choice ((I use a light ranch) )
