Mix teriyaki ingredients together, set aside. Dice chicken, add seasonings. Heat a non-stick pan over high heat. Once hot, add oil, then chicken. Let chicken cook undisturbed for 3-4 minutes then mix. Once almost cooked through, add teriyaki sauce, mix, and let cook 2 minutes. Add to bowl. Turn down the heat to medium-high.
In the same pan, add 1 tbsp oil. Add carrots and onions and sauté until tender (about 5-7 minutes). Add rice and saute until thawed (about 2 minutes). Then add tbsp soy sauce, 1/4 tsp garlic powder, and peas. Sauté 7-9 minutes (make sure you hear a constant fizzle so that rice gets a little crispy, don’t mix too often). You can add more soy sauce if you like a darker fried rice. Create a hole, add egg, break a little, leave for 30 seconds, then mix in with rice.
Add chicken/teriyaki sauce and green onions. Toss to warm. Plate and enjoy!
