Ginger Shrimp Stir Fry with Snow Peas

Ingredients
 

  • 1 lb. cooked shrimp (large)
  • 6 oz. snow peas
  • 2-3 tbsp. chives
  • 1 cup rice (uncooked, white, jasmine, and basmati are great with this recipe)
  • 1 tbsp. avocado oil
  • 8 garlic cloves (pressed)
  • 1 tsp. minced ginger (fresh, not dried)
  • tsp pepper

For Ginger Stir Fry Sauce

  • cup chicken broth or stock
  • 1 tsp corn starch
  • 2 tsp. rice vinegar
  • 1 tsp sugar
  • 1 ½ tsp low sodium soy sauce
  • tsp pepper

Instructions

  • Stir together sauce ingredients into a bowl well
  • Meanwhile, cook rice
  • Heat oil in a large skillet/pan over medium/high heat. Add shrimp, if cooked already, cook on each side of 1 minute and then remove. If raw, cook for 3-4 minutes or until shrimp is pink and cooked through
  • Remove shrimp from pan, then add 1 tsp avocado oil, ginger, garlic, snow peas, chives and a pinch of salt
  • Stir fry for 3 minutes
  • Add stir fry sauce, and stir in, letting simmer for about 2 minutes (until it begins to thicken)
  • Add shrimp back to pan, stir in.
  • Serve over 1/2 cup cooked rice
