Stir together sauce ingredients into a bowl well
Meanwhile, cook rice
Heat oil in a large skillet/pan over medium/high heat. Add shrimp, if cooked already, cook on each side of 1 minute and then remove. If raw, cook for 3-4 minutes or until shrimp is pink and cooked through
Remove shrimp from pan, then add 1 tsp avocado oil, ginger, garlic, snow peas, chives and a pinch of salt
Stir fry for 3 minutes
Add stir fry sauce, and stir in, letting simmer for about 2 minutes (until it begins to thicken)
Add shrimp back to pan, stir in.
Serve over 1/2 cup cooked rice
