Preheat your oven to 425F
Slice small sweet potato into wedges, line on a small baking sheet (or cast iron). Drizzle with tsp of olive oil, pinch of salt, and roast for 15 minutes.
Combine seasonings with 1/2 tbsp olive oil, mix well, then brush on sweet potatoes wedges. Roast for another 15 minutes.
Cook your chicken (seasoned with salt, pepper, garlic powder, onion powder, and smoked paprika- about 1/4 tsp each). You can also use rotisserie chicken.
Once sweet potatoes are crisp, add beans, cheese, and another layer of beans. Melt for 2-3 minutes in oven. Remove, add chopped chicken, sour cream, cilantro, lime, and avocado.
