Sweet Potato Nachos

Ingredients
 

  • 1 very small sweet potato (or 1/2 large sweet potato)
  • ¼ cup beans (tri-color or black beans)
  • .5 oz. cheddar cheese
  • .5 oz. monterey jack cheese
  • 3 oz. chicken breast (can also use rotisserie chicken)
  • 1 tbsp sour cream (or greek yogurt)
  • ¼ avocado (sliced or diced)
  • cilantro (for garnish, option)
  • 1 tsp olive oil
  • ½ lime

Seasonings

  • salt (to taste)
  • pepper (to taste)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp chili powder
  • ¼ red pepper flakes
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • ½ tbsp olive oil

Instructions

  • Preheat your oven to 425F
  • Slice small sweet potato into wedges, line on a small baking sheet (or cast iron). Drizzle with tsp of olive oil, pinch of salt, and roast for 15 minutes.
  • Combine seasonings with 1/2 tbsp olive oil, mix well, then brush on sweet potatoes wedges. Roast for another 15 minutes.
  • Cook your chicken (seasoned with salt, pepper, garlic powder, onion powder, and smoked paprika- about 1/4 tsp each). You can also use rotisserie chicken.
  • Once sweet potatoes are crisp, add beans, cheese, and another layer of beans. Melt for 2-3 minutes in oven. Remove, add chopped chicken, sour cream, cilantro, lime, and avocado.
