Ingredients: 1 lb shrimp (deveined, tails removed); 1 tbsp blackened seasoning (or cajun, see notes); ½ tsp kosher salt; ¼ tsp black pepper; 2 tbsp oil; 3 bacon slices (I used thick cut, chopped small); 1 yellow onion (medium, diced small); 1 red bell pepper (diced small); 2 celery stalks (diced small); 1 tsp garlic (minced); 4 cups chicken broth (low sodium); 2 cups corn (fresh, frozen, or canned); 2 yukon gold potatoes (diced small, option to use 1 more if potatoes are smaller); 1 cup heavy whipping cream; 1 tbsp blackened seasoning (or cajun); 1/2 tsp black pepper; green onions (chopped, optional)
