Ingredients: 2 tbsp olive oil (divided); 6 oz. andouille sausage (sliced small); 1/2 sweet onion (diced small); 3 carrots (medium, peeled and diced); 3 garlic cloves (minced); 1/8 tsp red pepper flakes; 2 cup red lentils (rinsed); 6 cup chicken broth or stock (low sodium); 1/2 tbsp Italian seasoning; 1/2 tsp salt (or to taste); pepper (to taste); 2 tbsp lemon juice; parsley (garnish)
