Spicy Korean BBQ Chicken Bowl

Name: Spicy Korean BBQ Chicken Bowl
Ingredients: 4 chicken thighs (boneless, skinless); 1 tsp garlic powder; salt (big pinch); pepper (big pinch); 1 tbsp cornstarch (for coating); 2 tbsp oil; 1 tbsp butter; 3 garlic cloves (minced); 1 tbsp honey; 2 tbsp gochujang chili pepper paste (I used the Lucky Foods brand); 1/4 cup water (more if necessary); 1 tsp sesame oil; 2 cucumber (thin sliced, I recommend using a mandolin if you have one!); 1/2 red onion (thin sliced); 1/4 cup brown sugar (light); 1 tbsp soy sauce (low sodium); 1 tsp sesame oil; 1 garlic clove (minced); 1/4 crushed red pepper (more for heat, optional); 1 cup rice (uncooked, jasmine or basmati works great with this dish! )
