Ingredients: 16 oz. skinless salmon (4-5 oz. ea); 2 tbsp avocado or olive oil; 1/4 cup soy sauce; 1 tsp sesame oil; 1/2 tsp chili oil; 1/2 tbsp rice vinegar; 1/4 cup brown sugar; 2 garlic cloves (grated); 1 tsp ginger (grated, or 1/2 tsp powder); small pinch of salt; 4 mini cucumbers (sliced to 3 mm with a mandolin); 1 tbsp rice vinegar; 1 tbsp soy sauce; 1 tsp sesame oil; ½ tsp sugar; ½ tsp garlic (minced); green onion (as much as you like); ¼ tsp chili oil (optional, more for spice); sesame seeds; kosher salt (big pinch); 3/4 cup long grain rice; 1 cup coconut milk; 1/8 cup water; 2 green onion; 1 tbsp coconut oil; Big pinch of salt; 1/4 avocado (optional); green onion (optional)
