Name: Spinach Stuffed Chicken
Ingredients: 8 oz chicken breasts (4 oz. each); 1 tsp paprika; 1 tsp garlic powder; 1 tsp onion powder; 1/2 tbsp Italian seasoning; kosher salt (big pinch, both sides); pepper (big pinch, both sides); 1/2 tbsp. olive oil; 3 tbsp light cream cheese (or vegan/diary free cream cheese); 2 tbsp white cheddar (grated); 1.5 cup spinach (roughly chopped); 1/2 tbsp ranch seasoning; 1 tsp garlic powder; 2 tsp lemon zest; kosher salt (pinch); 2 cups green beans; 1 tsp olive oil; 1 russel potato; 1 tbsp butter (melted); 1/8 cup milk (or 2 tbsp cream)
