Turkey Veggie Panini
Ingredients
- 2 slices sourdough bread
- 3 oz deli turkey
- ¼ avocado (mashed and/or sliced)
- ¼ cucumber (sliced)
- 1 tbsp hummus
- 1 tbsp dijon mustard
- 1 tbsp sun-dried tomato
- arugula
Instructions
- Spread 1 tbsp of hummus on one slice of bread and 1 tbsp dijon mustard on the other. Layer with turkey, avocado, cucumber, sun-dried tomato, and arugula. Transfer sandwich to a grill pan (or panini press) on medium heat and toast until grill marks appear, about 3-4 minutes.
- Let sandwich cool for 1 minute then slice in half.
