Turkey Veggie Panini

Ingredients
 

  • 2 slices sourdough bread
  • 3 oz deli turkey
  • ¼ avocado (mashed and/or sliced)
  • ¼ cucumber (sliced)
  • 1 tbsp hummus
  • 1 tbsp dijon mustard
  • 1 tbsp sun-dried tomato
  • arugula

Instructions

  • Spread 1 tbsp of hummus on one slice of bread and 1 tbsp dijon mustard on the other. Layer with turkey, avocado, cucumber, sun-dried tomato, and arugula. Transfer sandwich to a grill pan (or panini press) on medium heat and toast until grill marks appear, about 3-4 minutes.
  • Let sandwich cool for 1 minute then slice in half.
