Ingredients: 2-3 cups roma tomatoes; 1-2 cups spinach (I used 1); 1 package stuffed tortellini pasta (buy fresh/blanched - you'll find in the cheese aisle); 2 cloves garlic; 1 tsp salt and pepper; 1 tsp red pepper flakes (optional); 1/8 cup vegetable broth (optional); parmesan (for topping)
