Ingredients: 16 oz. lean ground beef (can also use turkey or meatless crumbles); 1 cup crushed tomatoes (about 1/2 can, use fire roasted for extra flavor); 1/2 red bell pepper; 1/2 green bell pepper; 1/2 yellow bell pepper; 1/2 onion; 1 cup basmati rice; 1/8 cup shredded cheese (cheddar or monterey); 1/2 tbsp olive oil; 1 tsp chili powder; 1 tsp cumin; 1/2 tsp garlic powder; 1/2 tsp onion powder; 1/2 tsp smoked paprika; 1/2 tsp salt; 1/2 tsp pepper
