Ingredients: 1/2 Onion; 1 Whole carrot; 1/2 bell pepper (sliced); 3-4 Mushrooms (use more or less depending on your love for shrooms); 1 tbsp. Chopped peanut (can omit if allergy); 1/8 cup green onion (for topping); Rice noodles ((about a 1/2 pack)); 1/2 tbsp Sesame oil (or coconut oil ); 2-3 garlic cloves; 1/2 tbsp. Ginger paste; 1/8 cup Brown sugar; 1 tbsp. Low sodium soy sauce; 1 tbsp. Tamarind (can omit if you don't have/can't find); 1/4 Lime Squeezed; red pepper flakes (about 1/4 - 1/2 tbsp)
