White Chicken Chili

Name: White Chicken Chili
Ingredients: 12 oz rotisserie chicken (or 4 cups, pre-made, shredded); 3 tbsp olive oil; 1/2 yellow onion (medium, chopped); 5 garlic cloves (minced); 4 oz diced green chilies (I used the La Preferida brand); 10 oz rotel (I used mild for more spice); 15 oz pinto beans (drained, reg. can); 15 oz cannelini beans (or navy, drained, reg. can); 15 oz corn (or 1 can, drained); 3.5 cup water; 1 chicken bouillon cube; 8 oz cream cheese (low fat, softened, cubed); 1/4 tsp salt (or to taste); 1/2 tsp black pepper (or to taste); 1 tsp dried oregano; 1 tsp cumin; 1/4 tsp red pepper flakes (crushed); 1 tsp chili powder; 1 oz ranch seasoning (1 package); mild cheddar cheese (shredded); avocado (chopped or sliced); cilantro; sour cream (light, optional)
