Ginger Shrimp Stir Fry with Snow Peas
Ingredients
- 1 lb. cooked shrimp (large)
- 6 oz. snow peas
- 2-3 tbsp. chives
- 1 cup rice (uncooked, white, jasmine, and basmati are great with this recipe)
- 1 tbsp. avocado oil
- 8 garlic cloves (pressed)
- 1 tsp. minced ginger (fresh, not dried)
- ⅛ tsp pepper
For Ginger Stir Fry Sauce
- ⅓ cup chicken broth or stock
- 1 tsp corn starch
- 2 tsp. rice vinegar
- 1 tsp sugar
- 1 ½ tsp low sodium soy sauce
- ⅛ tsp pepper
Instructions
- Stir together sauce ingredients into a bowl well
- Meanwhile, cook rice
- Heat oil in a large skillet/pan over medium/high heat. Add shrimp, if cooked already, cook on each side of 1 minute and then remove. If raw, cook for 3-4 minutes or until shrimp is pink and cooked through
- Remove shrimp from pan, then add 1 tsp avocado oil, ginger, garlic, snow peas, chives and a pinch of salt
- Stir fry for 3 minutes
- Add stir fry sauce, and stir in, letting simmer for about 2 minutes (until it begins to thicken)
- Add shrimp back to pan, stir in.
- Serve over 1/2 cup cooked rice
