Hot Honey Salmon Bowl

Ingredients
 

  • 1 lb salmon (skinless)
  • 1 cup cooked rice (about 1/3 cup in ea. bowl)
  • 12 oz. green beans
  • 2 tsp avocado oil
  • salt (to taste)
  • pepper (to taste)

Hot Honey Mixture

  • ¼ cup honey
  • 1 tsp hot sauce (add more or less depending on the spice)

Instructions

  • Cook rice and keep warm (I wash my rice, then add to a pot of salted water with 2 crushed garlic cloves and thyme). Set aside.
  • Bring a pot of water to a rapid boil, salt the water (like the sea), add green beans (I bind them so they are floating all over the place, but you don’t have to). Blanch for exactly 2 minutes and 30 seconds. Remove and add to ice bath for 15 seconds.
  • Skin and cube salmon, lightly salt and pepper.
  • Heat a non-stick skillet over medium-high heat with 1 tsp of avocado oil, add salmon. Sear for 2-3 minutes, then flip. Add hot honey mixture after 1-2 minutes. Once foamy, begin to baste your salmon.
  • In a bowl add rice, green beans, and top with salmon.
