Sweet Heat BBQ Chicken Salad
Ingredients
- 5 oz. chicken breast (diced)
- ¼ tsp garlic powder
- ¼ tsp onion powder
- salt (pinch)
- pepper (pinch)
- ¼ cup BBQ sauce
- 1 green onion (sliced)
- ½ cup cherry tomatoes (sliced)
- ½ mini cucumber (chopped, about 1/3 cup)
- 3 cups romaine (chopped)
Instructions
- Chop romaine, tomatoes, and cucumbers. Add to a bowl and set aside.
- Heat non stick pan over medium-high heat. Season diced chicken with garlic and onion powder, salt and pepper. Add 1 tsp avocado oil to pan then add chicken. Let cook undisturbed for 3 minutes to get a nice char, turn, then let cook 2 minutes. Mix, let cook another 1 minute. Turn off heat, then add BBQ sauce. Mix well, then add on top with salad. Enjoy!
