Sweet Potato Nachos
Ingredients
- 1 very small sweet potato (or 1/2 large sweet potato)
- ¼ cup beans (tri-color or black beans)
- .5 oz. cheddar cheese
- .5 oz. monterey jack cheese
- 3 oz. chicken breast (can also use rotisserie chicken)
- 1 tbsp sour cream (or greek yogurt)
- ¼ avocado (sliced or diced)
- cilantro (for garnish, option)
- 1 tsp olive oil
- ½ lime
Seasonings
- salt (to taste)
- pepper (to taste)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- ¼ tsp chili powder
- ¼ red pepper flakes
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- ½ tbsp olive oil
Instructions
- Preheat your oven to 425F
- Slice small sweet potato into wedges, line on a small baking sheet (or cast iron). Drizzle with tsp of olive oil, pinch of salt, and roast for 15 minutes.
- Combine seasonings with 1/2 tbsp olive oil, mix well, then brush on sweet potatoes wedges. Roast for another 15 minutes.
- Cook your chicken (seasoned with salt, pepper, garlic powder, onion powder, and smoked paprika- about 1/4 tsp each). You can also use rotisserie chicken.
- Once sweet potatoes are crisp, add beans, cheese, and another layer of beans. Melt for 2-3 minutes in oven. Remove, add chopped chicken, sour cream, cilantro, lime, and avocado.
