Name: Tuscan Salmon Pasta
Ingredients: 16 oz. skinless salmon (about 4 oz. in ea. portion); 1/2 sweet onion (small, diced); 1/3 cup cherry tomatoes (halved); 1/4 cup sun-dried tomatoes; 2-3 cups spinach (chopped, I used bloomberg spinach from my garden); 4 garlic cloves (minced); 1 cup half and half (or whatever cream you prefer); 1/2 cup parmesan cheese (freshly grated); 1/4 cup pasta water; 2 cups penne pasta (cooked); 1 tbsp olive oil; 1 tbsp avocado oil; 1 tsp garlic powder; 1 tsp onion powder; kosher salt (big pinch); pepper (big pinch)
